Hello everyone, today I am sharing a super yummy, super easy, budget friendly, and “semi-homemade” dinner with you all. I am sharing this Scalloped Potato Cheesy Hamburger Bake. My kids adore this recipe and when my 8 year old loves something I make he always says ‘Mom can you put this on your dinner list” its the cutest thing, because I don’t have a dinner list…. unless you count the dinner list I file away in my head. HA! I do have recipes and recipe books, but for simple family friendly dinner meals like this one, its filed away in my head.

- 1 box of Idahoen Homestyle scalloped potatoes
- 1 bag of frozen mixed veggies - 1 1/2 cups worth or 1 1/2 cup of canned and drained mixed veggies
- 2 lbs of lean hamburger meat cooked, drained
- 1 1-2 cups of shredded cheese
- 1 tbsp of dried onion
- 1 tbsp of garlic pepper
- salt to taste
- Start by following your boxed potatoes and get it mixed up in a 3-5 qt casserole dish.
- Then add your cups of frozen or canned mixed veggies, and mix them in fairly well. Pop it in the oven and bake it according to you scalloped potatoes bake time. While its baking cook up your hamburger, season it with the seasoning listed, drain and set aside. When the scalloped potatoes/veggies are done baking, pull the dish out and add in your hamburger meat. I mix it around pretty well. I top it with the cheese (add more if you would like) and I bake it for about 8 more mins. (until cheese is gooey on top) You can serve this with a dollop of sour cream on top if you choose.

Hello Erika, I shared it in the recipe card. You follow the scalloped potato boxs temp and time and then I also added that I top it with cheese and bake an additional 8 mins for the cheese to melt.
