Oh’ YUM- Pumpkin Crunch Recipe

pumpkin crunch
– 1 large can of pumpkin
– 1 can of evaporated milk
– 3 eggs
– 1 c. of sugar
– 1/3 tsp. of cinnamon
– 1 box of yellow cake mix
– 1 to 1/2 c. of granola , pecans, or chopped walnuts. ( I only do granola its delish!)
– 2 sticks of butter melted

Grease 13×9 inch pan. (or equivalent) Blend the pumpkin, milk, eggs, sugar, and cinnamon together. Pour in pan. Sprinkle the cake mix over the pumpkin mixture. DO NOT mix the cake mix in! Sprinkle the top with granola or pecans or chopped walnuts. Last drizzle the melted butter over the top very evenly. Bake 350 for an hour, or until the top is golden brown.

Serve with a dollop of whipped cream or vanilla ice cream. ITS EVEN GREAT COLD after its put away in the fridge overnight, seriously love it cold too.

  1. I absolutely can’t wait to try this. It sounds yummy, and I think my co-workers will love it. We are doing a thing in our group where someone brings a pumpkin recipe each week up to Thanksgiving.

  2. Thanks for the great recipe. I so agree with you about Thanksgiving coming first. I thought after Halloween I would be able to download some Thanksgiving printables but most every blog I read went straight to Christmas. I’m always saying “What about Thanksgiving people?”, to the stores and TV.
