Easy Chicken and White Bean Soup

Last night I told the hubs I wanted to make a yummy soup. So I checked the pantry to see what we had, pulled out the ingredients, and threw this soup together. “Literally!” BUT, don’t be fooled by the words “thrown together!” So I put this soup together knowing what would give it good flavor and make it taste good! and Oh’ My’ Gosh.. it was amazing!!! So flavorful and delicious! Even the hubs said its one of the best soups he has ever tasted. Its a total keeper in our soup recipe stash. We also ate it with some homemade corn bread. The whole family enjoyed our dinner last night.

chicken and white bean soup
Ingredients:
-1 32 oz. carton of chicken stock
– 11/3 cup of milk
– 1 can of cream of chicken soup
-3 cans of white beans (2 drained 1 not)
– 1 can of green chilies 
– 1 tbsp of dry oregano
-1 tbsp of dry basil
– 1 tbsp of onion flakes
– 2 tsp of garlic salt
– 1/2 tsp cayenne pepper
– 4-5 boneless skinless chicken breasts 
-2 tbsp of vegetable oil
-salt and pepper to taste

Directions:
Start by adding your chicken stock, milk, and cream of chicken soup to a large pot. Add in all your dry ingredients, green chilies, and 3 cans of white beans (2 cans drained 1 not drained) Mix everything on medium to high heat, stirring everything together real well. 
Next dice up your chicken into small cubes/chunks. Add your oil to a skillet/pan and cook up your chicken until they are just finished (not brown). Season the chicken with some salt and pepper. Then add your chicken with the oil/juice to you pot of soup and stir it all in. This stove top soup will cook for about 20 minutes total, medium to high heat. 

Fill your bowls with soup and add a small dust of parsley (optional, its more for looks winks!)
